Mi Cartagena’s Coffee is grown over 940,000 hectares of lush coffee farms With at elevation of 1200 and 2,000 meters — m.a.s.l above sea level. Cafe Arabica growth in volcanic, fertile soil and has notes of chocolate, nut, herbal, fruity, acidic, or citrus depending on the region.
The journey which began three centuries ago at the hand of Jesuit priests has now developed and blossomed into an entire industry that relies on standards of environmental consideration and sustainable practices. The coffee workers check the plant every 10 days during the harvest season, and pick the best cherries. Even though harvesting methods can be different from region to region, the care and meticulousness that goes into the process is consistent.

North Region
It grows in La Guariga, Magdalena, Cesar, Bolivar, Norte de Santander, Antioquia, and Choco. The coffee from this region exudes deeper, more chocolaty and nutty flavors and has less acidity but more body.
Central Region
The coffee is grown with great care in Caldas, Risaralda, Quindío, Valle del Cauca, Boyacá, Casanare, Cundinamarca, and Tolima. Considering the climate and harvesting processes used here, the coffee has a more herbal or fruity flavor.
Southern Region
Meta Cauca Huila Nariño, Caquetá, and Putumayo are the more popular coffee-growing regions on this side of the country. If you were to sip a fresh cup of Colombian brew, you get strong notes of acidity and citrus.

The Origin
The origin of the coffee begins with choosing the right region. Whether it’s the north, south or central Colombia, careful consideration of the location, fields, moisture, shade, altitude, temperature, climate etc. that will surround the region need to be studied for the perfect crop.
Recolleccion
Recolleccion or the harvesting process is one that requires just as much care as the farmers put in growing the coffee. In most regions, the cherries are always handpicked. Before commencing the picking process, the farmers carefully observe the cherries to make sure they are at the right stage of ripeness.
